Create new knowledge in food science, nutrition, and health promotion through research and development, resulting in a well-prepared new generation of scholars, a vibrant food industry and related food systems.

• Communicate knowledge in food science, nutrition, and health promotion to citizens in our state, the nation and globally, to encourage changes in behavior; which results in improved health.

• Enhance the capacity of the professional workforce and infrastructure in Mississippi and the nation through training and certification, as well as applied research and outreach in food science, nutrition, and health promotion.

• Form a unit that can serve as the model for future units to address the complex issues of food, nutrition and health promotion as they affect our state and nation.

• Develop materials, strategies, and seek funds to recruit and retain undergraduate and graduate students to support departmental academic and research programs.

• Develop strategies to identify priority research areas and unique opportunities where faculty and associates can be competitive for funding to sustain and support departmental initiatives.

Make significant contributions to the economic development of the state and the region by training and providing the best expertise and support to clients.
